HERBY BARLEY SALAD WITH MUSHROOMS
Serves 4
Ingredients
- 150g pearl barley
- 100g onions, finely chopped
- 200g mushrooms, cut into large pieces
- 3-4 garlic cloves, crushed
- 1 tablespoon chopped fresh cilantro/coriander leaves
- 1 tablespoon chopped fresh parsley
- 2 tablespoons fresh lemon juice
- 4 teaspoons olive oil
- Freshly ground black pepper
- Salt, to taste
Instructions
- Cook barley in a medium pot of boiling salted water until tender. Drain and spread out the barley on a baking sheet.
- In a pan, add some olive oil, sauté onion and garlic. Toss in mushrooms and cook them until done. Season with salt and pepper and toss well.
- Toss warm barley, cilantro, parsley, lemon juice, in a large bowl to combine; season with salt and pepper. Add mushrooms; toss again to combine. Serve immediately.
